INGREDIENTS:

6 egg whites, divided
[
2 pinches salt, divided
[
1 cup sugar, divided
[
2 cups unsweetened coconut (shredded or flaked)
THE STEPS
1.
Preheat oven to 375°F and place a sheet of parchment paper on each of the two cookie sheets.
2.
In the mixing bowl, beat 3 egg whites with the electric mixer on high speed until they form shiny, stiff peaks (6 or 7 minutes).
3.
Gently stir in 1 pinch of salt and ½ cup of sugar.
4.
Pour this mixture onto a clean plate, using the rubber spatula to make the pile of egg foam as tall as possible.
5.
Put the remaining 3 egg whites and pinch of salt in the same mixing bowl and begin mixing on high speed.
6.
As soon as the egg whites start to foam, slowly sprinkle the remaining ½ cup of sugar while the mixer is still running.
7.
Continue to mix on high speed until the eggs form shiny, stiff peaks (9 or 10 minutes total).
8.
Pour this mixture onto a clean plate, using the rubber spatula to make the pile of egg foam as tall as possible.
9.
Use a ruler to measure both towers of foam and record your observations.
10.
Take your tallest foam tower and return it to the mixing bowl.
11.
Add 2 cups unsweetened coconut to the mixing bowl and stir it in gently.
12.
Drop the egg foam onto the parchment-lined cookie sheets by the spoonful. You can make any size cookie you like.
13.
Bake the cookies for 12 minutes. Turn off the oven and let the cookies cool to room temperature.
